Coming back at you with another RIDICULOUSLY easy recipe - so good for lunch or bulk it out with roasties or chips for a dinner.

You could also use this marinade on any veg you like, I have tried it with butternut squash and that is also really good!

You will need:

1 aubergine

1 tbsp vegetable oil

1 tbsp maple syrup

1 tbsp soy sauce

I double the ingredients because I usually roast two aubergines.


1. Preheat the oven to 220 degrees celcius

2. Cut the aubergine in half and score it into a criss-cross pattern as shown in the picture

3. Prepare the marinade. Pour it over the aubergines and spread until they are covered

4. Roast for 20 minutes, flip them over, and then roast for another 20 minutes.

All done ! I said it would be easy! Enjoy.
